Fall Yummies

My friend recently posted a fall transition meal that sounded amazing! One item was grilled peaches with a balsamic reduction and goat cheese. We have a few peaches left from our farmers market basket and we always keep goat cheese on hand. So.....why not fire up the big green egg to grill some sweet little treats ;) throw in a drizzle of balsamic glaze and cover them in goat cheese...yes, a perfect pairing with our pot roast made with the beef we ordered from an organic farm in Alabama. The pot roast also included onions and carrots from our basket and we made mashed red potatoes from the basket too. Let's just say...perfect fall meal.

As we look back at the last year I wanted to reflect on how you have grown and matured to be 4.

Three was a rough start, the fall was tough but we powered through thus allowing us to enjoy all your crazy, quirky, fun, spunky sides.

This year you started by saying Guurl, Squurl, and Gitenown and most recently stated that you said it like before but now you say Girl, Squirrel and Nightgown. You can also now say Supercalifragilisticexpialidocious, atrocious and precocious.

Apparently you can spell things we didn't know like i-c-e c-r-e-a-m - yes i want some ice cream.

You still say umputer..hopefully that will stick.

You have an amazing memory - remembering things that go way back.

You learned to roll your tongue and cross your eyes.

You rocked your first trip to the dentist - mouth open the ENTIRE time.

This was the year of the hot air balloon that you LOVED. You were too short to look over the side of the basket so you used the step as a window. Hopefully you will love flight in any form as much as your mommy.

When we were preparing for your first day of Pre-K we talked a lot about what you wanted to be when you grew up. "I want to be a mommy? ok you know you can be a mommy and something else too? I don't want to be a mommy like you I want to be a white mommy. a what? lets talk. you know a white mommy (finger wave back and fourth) aarrrrggg oh a mummy? yes"

You had some amazing fashions through the year also, my favorite a pair of PJ shorts made into a short skirt ;) no one can say you aren't original.

All these changes, all these little things make you one amazing, smart, courageous, wonderful little person. We can't wait to see how you will change and mature over the next years.

We love you little one...I hope you never stop being original!

Modified Slow Cooker Veggie Lasagna

Thanks to a friend of ours telling us about Farmers Market Baskets we have started getting our weekly basket of fresh, organic, fruits and veggies. This was our first week for the basket so we wanted to use as much as we could to decide what size would fit our family. I have been pinning a lot of simple life things on pinterest including this recipe from Oh My Veggies.  We modified slightly since we had a plethora of veggies at our disposal. Plus we wanted to empty our refrigerator of excess veggies and greens. So we added things like broccoli and tons of spinach. We also used basil we grew in our garden. If anything it was a beautiful dish of colorful veggies. Oh and it was pretty tasty too!

Fall Essential Wardrobe Pieces

Fall...it is finally here. Long sleeves with shorts, coffee, leaves, camping, football, our annual party, cooking, cabins, the switch from white to red wine...ahhhh

A fall wardrobe is one of my most favorites. Well lets not lie, FALL in general is my most favorite time of year. Boots, long sweaters, snuggly items to wear while curled up with a cup of coffee and a great book like this one, by a fire. One item that I feel I live in almost all year round but ESPECIALLY in boot season is the Lou and Grey leggings. When they are on sale I stock up. They are the best for lounging, walking around town, work, you name it they can be worn.
